Bruce Foods Corp. discovers sweet potato power

There's power in sweet potatoes. And we're not just talking about nutrition. Bruce Foods Corp., a family-owned, corridor-based food manufacturing company with plants in Louisiana, North Carolina and Texas, has developed a unique method of producing fuel from the waste peelings byproducts at its canning plants. The company built covered digesters, which converted the digestion process from aerobic to anaerobic. The anaerobic process produces methane gas, which is a combustible fuel similar to natural gas. The company captures methane gas under digesters covers, compresses it and pipes into their plants to burn as boiler fuel. Thus fossil fuel is replaced with green gas fuel made from organic renewable material, reducing the company's carbon footprint. The process was put into practice as part of Bruce Foods' environmental policy on recycling and emissions.
